Whenever I visit India I try different idli at breakfast (at a restaurant buffet). However, my sons are not a fan of idli in fact my second son doesn't even eat idli. So I seldom make idli at home even if I make it is just for us and dosa for my sons. I wanted to try this for a snack (stuffed idli). For idli batter pls refer here. If you want to do it with millet you can refer here. I have added vegetables based on what I had. you can add your favorite vegetables

Idli Batter - 2 cup
Cooked potato - 1/2 cup
Mixed vegetables - 1.5 cups (I have used capsicum, carrot)
Onion - 1 (chopped finely)
Garlic - 2 pods (chopped finely)
Turmeric powder - 1 teaspoon
Mustard seeds - 1/2 teaspoon
cumin seeds - 1/2 teaspoon
urad dal - 1 teaspoon
chana dal - 1 teaspoon
cashew - 1 teaspoon
curry leaves - 10 (chopped finely)
oil - 2 teaspoon
Salt to taste

Heat oil. Add mustard seeds, cumin seeds. let it crackle. Add Urad dal, chana dal, curry leaves. fry till brown in color. Add onion, garlic & required salt. fry till transparent
Add vegetables, turmeric powder. mix well. cook it. Add potato and mix well. mash roughly
Stuffing is ready. In greased idli plate pour 1/2 of batter. Add Stuffing
Cover it with an idli platter. steam it in idli cooker till it is done. once done switch off

let it cool down for 2 mins. once cool down remove it
serve hot
