Healthy Cauliflower Rice Recipe by Veena Theagarajan

Recently I use cauliflower rice whenever I want to go for low carb / Calorie meal. My most favourite is Cauliflower tofu rice. Next to it is this simple salad. You can add your favourite dressing but I have used simple olive oil and lemon.  For this salad you can add your own vegetables or mix. I always go for 1 vegetable, 1 sprouts and rest is is based on what is available. 
Ingredients

Grated cauliflower - 1 cup
Onion - 1 (slice it)
Garlic -2 pods (peel and slice)
mint leaves  few
salt to taste
Cherry tomaotes - 2-3
grated carrot - 1/4 cup
sprouts - 3 tablespoon
cooked corn - 2 tablespoon
Oil- 1 teaspoon
For dressing
Olive oil - 1 tablespoon
Pepper powder - 1/2 teaspoon
Lemon juice - 1 teaspoon

Method:

Mix in all the ingredients under dressing. Keep it aside. Heat pan with oil. Add garlic, onion and mint leaves. 

Fry till transparent. Add cauliflower and cook it with salt

Once done switch off. Add cherry tomatoes, grated carrot, corn and sprouts. 

Mix well. Add dressing. Mix well
