Sweet Potato Salad - Healthy salad recipe - Starter Recipe - Diet Plan - onepotmeal recipe

The combination of sweet potatoes, Vegetables and chickpeas makes this salad well balanced meal. I have made yogurt base dressing to go with it. If you are not a big fan of sweet potato you can replace it with potato. I love to make it with crunchy onion.. you can add toasted nuts of your choice. I have added roasted cashew. It is quite filling and perfect for light dinner or lunch. 

Sweet potato - 1 cup (cubed)
Green Bell peppers - 1 tablespoon
Onion - 1 tablespoon
Spinach or kale - 1 handful
Cashew - 1 tablespoon
dates - 1 teaspoon (slice into thin strips)
Cooked Chickpeas or sprouts (I have used sprouts) - 1/4 cup
Coriander Leaves - 2 teaspoon


yogurt - 1/4 cup
Lemon juice - 1 teaspoon
Garlic - 1 teaspoon
salt to taste
Pepper to taste
Olive oil  - 1 teaspoon


Mix all the ingredients under dressing section and grind to smooth sauce

Mix everything under ingredients and mix well.Drizzle dressing.
