Tofu Rice - Onepot meal - Rice recipes - Party recipes - Healthy rice

Tofu is good source of protein for vegan or vegetarian who is not fond of milk. My sons love tofu since they are used to local cuisine from their birth. For me it took a while.. In my recent visit to India I visited a couple of Chinese restaurants they make nice Tofu dishes too. One of the dish I have tried is fusion fried rice with tofu. It is mildly spiced rice. I have used Garam masala in it you can season it with whole spices. It is so simple even bachelors can do it. It is also a perfect balanced meal
Ingredients:
Oil - 1 tablespoon (I have used Coconut oil)
Firm Tofu - 250g
Peas - 1/2 cup
Pepper powder to taste
Salt to taste
Onion - 1 (sliced thinly)
Tomatoes - 1 (finely chopped)
Green chillies - 2 (sliced)
Freshly crushed pepper - 1/4 teaspoon
Turmeric powder - 1/4 teaspoon
Garam masala - 1/2 teaspoon
Cumin seeds - 1 teaspoon
Coconut oil - 1 teaspoon
Garlic - 7 pods
spring onion - 1 tablespoon (finely chopped)
Cooked rice - 3 cup (I have used brown rice)

To grind

Coconut - 2 tablespoon
Cashew - 5
Ginger - 1/2 inch
Poppy seeds - 1/2 teaspoon (optional)
Fennel seeds - 1/4 teaspoon
Roasted gram dhal  - 1/2 teaspoon
Method:

Grind the ingredients under to grind section (I had the paste at home so no pic)
Heat oil in a pan. Shallow fry tofu and keep it aside.

In same pan add Cumin seeds let it crackle. Add Green chillies, Garlic fry till garlic is slight brown in color. Add Onion fry till transparent (while frying add salt)

Add Tomatoes. Fry till mushy. Add turmeric powder, Pepper powder, Garam masala & grinded paste. Fry for a min in a low flame. 

Add 1/4 cup of water let it cook for 3-5 mins in low flame. Add fried Tofu. Mix well. cook for a min

Add Cooked rice. Mix well. Add coriander leaves. 

Serve hot
