Brookies recipe - Eggless Brookies Recipe - Eggless Baking - Snack, Dessert, Kids friendly recipe

Brookies -a new term I learned from my nieces and sons. I have seen photos in Instagram but the name didn't register in my mind. The other day we wanted to bake & we were debating what to bake? Cookies or cakes? My niece asked for brookies. so when I checked then I realized it is cake and cookies together. For a long time, I wanted to try something crispy (crumbled) bake so I tried this. It came out so well! Everyone enjoyed it. I have followed my brownie and Short bread cookies recipe.
Ingredients:

Brownie

All-purpose flour - 1 cup
Cocoa powder - 1/2 cup
Icing sugar - 3/4 cup
Baking soda - 1 teaspoon
a generous pinch of salt
Melted Butter  - 1/3 cup
Vanilla essence - 1 teaspoon
buttermilk (I have used 1 cup milk +  2 teaspoons Vinegar) - 1 cup
Instant coffee powder - 2 teaspoons

Make sure all the ingredients are at room temperature

For Cookies
All-purpose flour - 1 cup (125g)
Salt - 1/8 teaspoon
Butter - 1 stick (1/2 cup) (57g)
Powdered Sugar - 1/2 cups (100g)
Vanilla extract - 1 teaspoon

Method:
Let's do bake the brownie first. Sift all-purpose flour, coffee powder, baking soda, salt, and cocoa powder together a couple of times until you get a uniform mixture of them.
Add vinegar to milk and keep it aside for 10 minutes.
Whisk melted butter, sugar, and vanilla essence. Add buttermilk and whisk again until you get a uniform mixture.
Now fold in the dry ingredients into wet ingredients and mix very gently with a spatula or spoon.
Grease an 8" baking tray and line up a parchment paper. Transfer the batter mixture into it.
Preheat the oven to 180 degrees.Bake for 20 mins at 180 degrees or until mostly done.
While Brownie is getting baked do Cookie dough. Shift the flour and salt together. Keep it aside.In a broader bowl take butter and icing sugar and beat it till it is creamy and smooth. Scrap the sides as required. I have used hand mixer. Now add Vanilla extract. Beat again. 
Now add Flour and bring together with your hands into stiff dough. 
Once done sprinkle cookie dough on baked brownie. Bake again for 10-12 mins at 180 degree C
Let it cool down and serve!You can enjoy with Ice cream too..
