Zucchini fritters recipe - Zucchini Indian Pancake recipe - Gluten free recipe - snack recipes - breakfast recipes -

Zucchini is something I started to use only after moving to Singapore. I am still finding way to include that into our regular diet. I have posted quite a few recipes in my space. Normally I make Zucchini bajji or Zucchini western pancake. I wanted to try Indian type of gluten free pancake for our tea time/ Snack. I had this a couple of times for weekend brunch too. My kids and my hubby love this version than western pancake. Once I added Carrot with it. It tasted nice too. Do try this out this will give nice alternative to regular Indian vegetables

Zucchini - 1.5 (medium size)
Rice flour - 1/4 cup
Chickpea flour/ Besan flour / Garam flour - 1/2 cup
Store brought Bajji flour - 1/2 cup (If you don't have add besan flour)
Salt to taste
Red chilli powder - 1/2 teaspoon (if you use 1 cup of Garam flour use 3/4 teaspoon. Adjust to spice level)
Roasted cumin powder - 1/2 teaspoon
Hing/ Asafoetida  - 1/8 teaspoon
Yogurt - 2 tablespoon (optional)
Coriander leaves - 1 tablespoon
Water as needed.
Oil for shallow frying (1/4 cup)


Grate Zucchini. 
In a broader bowl take all ingredients except oil, Mix well with required water. Add little by little till you get idli batter consistency
Add coriander leaves and mix well. Heat oil for shallow frying. 
Once oil is hot pour 1 tablespoon of batter to form small round pancake. You can do few at a time depends on the size of the pan. Cook it in Medium low flame till sides are brown. Turn it over cook again
Once done remove it from the pan and serve hot. you can serve with Coconut chutney or Ketch up
