I wanted to bake this for my kid's breakfast. This is a recipe without any egg or butter. I was not sure how the kids would like it. It turned out to be a good option for packing to school. I have added all three colours of capsicum but you can add your kids favourite vegetables. My kids are not big fans of corn so I didn't add but you can add vegetable of your choice. I have added olive oil but you can add any cooking oil. I have mixed in some wheat flour. I haven't baked whole wheat pizza muffin maybe you can try
All-purpose flour - 1 cup
Ingredients
Wheat flour - 1/2 cup
baking soda - 1/4 teaspoon
baking powder - 1 teaspoon
Salt - 1/4 teaspoon
Mixed Bell pepper - 1 cup (I have used all 3 colours)
Tomatoes - 2 teaspoon
Tomato sauce - 1 tablespoon
red chilli flakes - 1/2 teaspoon
red chilli flakes - 1/2 teaspoon
Mixed Italian Herb - 1 teaspoon
Pepper to taste
Cheese - As needed (I have used 1/2 cup)
olive oil - 1/2 cup
Curd - 1/4 cup
Method:
Sift all-purpose flour, wheat flour, salt, baking soda, baking powder. Add Italian herb and mix well.
In a broader bowl add olive oil, milk, curd, 2 teaspoons of Tomato sauce, 1 tablespoon of Cheese. mix well

Grease muffin tray and preheat oven at 180 degrees C. Fill each cup with batter till 1/2 add tomato sauce, bell peppers and a bit of cheese. Add more butter and top it off with some more bell peppers and cheese
Let it cool down and enjoy

ReplyDeleteI tried it but baking time taken was about 30 mins.. and one thing which rod you used for baking these?? I used bottom rod for first 20 mins and then 10 mins upper rod in otg.. is that fine??
