Pizza muffin recipe - Muffin Recipe - Kids friendly Recipe - Snack recipe

I wanted to bake this for my kids breakfast. This is a recipe without any egg or butter. I was not sure how the kids would like it. It turned out to be a good option for packing to school. I have added all three colours of capsicum but you can add your kids favourite vegetables. My kids are not big fans of corn so I didn't add but you can add vegetable of your choice. I have added olive oil but you can add any cooking oil. I have mixed in some wheat flour. I haven't baked whole wheat pizza muffin may be you can try
Ingredients
All purpose flour - 1 cup
Wheat flour - 1/2 cup
baking soda - 1/4 teaspoon
baking powder - 1 teaspoon
Salt - 1/4 teaspoon
Mixed Bell pepper - 1 cup (I have used all 3 colors)
Tomatoes - 2 teaspoon
Tomato sauce - 1 tablespoon
red chlli flakes - 1/2 teaspoon
Mixed Italian Herb - 1 teaspoon
Pepper to taste
Cheese - As needed (I have used 1/2 cup)
olive oil - 1/2 cup
Curd - 1/4 cup
Milk - 3/4 cup

Method:

Sift all purpose flour, wheat flour, salt, baking soda, baking powder. Add Italian herb and mix well. 
In a broader bowl add olive oil, milk, curd,  2 teaspoon of Tomato sauce, 1 tablespoon of Cheese. mix well
Fold dry ingredients to wet gently. Add half of Bell peppers. Fold in
Grease muffin tray and pre heat oven at 180 degree C. Fill each cup with batter till 1/2 add tomato sauce, bell peppers and bit of cheese. Add more batter and top it off with some more bell peppers and cheese
Bake it at 180 degree for 15-17 mins or inserted toothpick comes out clean
Let it cool down and enjoy

  3. Can I replace APF with whole wheat flour

    1. I recommend to do it 50% instead of whole as whole wheat will make the muffin denser
