Fruit and vegetable briyani rice - Rice recipes - one pot meals recipe - lunch recipes - Party food recipes

Any mix vegetables rice / briyani is my go-to recipe esp for a lazy weekend lunch esp Sunday. I have posted many vegetable briyani versions, Mughali veg rice and Mugalai Pulav with Fruits. I wanted to try Fruit and Veg together. Also I wanted to do mixed rice without much Indian masala so this rice has less masala. If you don't have all the spices it would be still fine just use whatever is available. This is a perfect way to feed your kids with both vegetables and fruits in one dish

Bastmati rice - 1.5 cups
Mixed vegetables - 1.5 (I have used beans, carrot and cauliflower)
Apple - 1 (Peel the skin and chopped finely)
Grapes - 2 (I have used green seedless)
Salt to taste
Mint leaves - 1 handfull
Coriander leaves - 1/2 cup
Green chillies - 2
Onion - 2 (Sliced thinly)
Tomatoes - 1 (Chopped)
Ginger paste - 1 teaspoon
Garlic paste - 2 teaspoon
Cashewnuts - 1 tablespoon
Coriander leaves - 1 tablespoon (chopped finely)
Butter - 1 tablespoon + 1 teaspoon
Rose water - 2 teaspoon

For Tempering
Cinnamon - 1 inch
bay leaves - 1
clove - 2
Cardamom - 2


Wash and soak rice for 10 mins. Cook 3/4th  it with required salt with enough water.
Drain the water and leave it aside. 
Heat 1 tablespoon of butter. Add sliced onion and fry till transparent. Add Garlic, ginger paste fry till nice aroma released. Add tomato and fry till mushy. 
Add Mint leaves and 1/2 cup coriander leaves and switch it off.. Let it cool down. 
Grind it to smooth paste. Cook the vegetables by adding required water and salt. Cook till 3/4th done. Drain the water (keep it for cooking rice) and keep the vegetables aside. 
Heat 1 teaspoon of ghee. Add Broken cashew and fry till brown color. Remove cashewnuts (drain it) add all the ingredients under For tempering section. 
Add grinded paste. Fry it for 2 mins. Add cooked vegetables and mix well. Cook for another min. 
Add apple, grapes, rose water, Fried cashew, coriander leaves and mix well. 
Add cooked rice. Add fried cashew and coriander leaves. Mix well.. Cook for another 2 mins.

Switch it off and serve hot
