Almond Vanilla cake - Eggless Cake recipe - baking recipes - Cake Recipes - Eggless Baking

My son wanted simple Vanilla cake for quite some time. I wanted to try something diff. So I decided to make almond vanilla cake. I had some left over Milk powder. I read in some magazine that milk powder gives nice texture to cake so I decided to use Milk Powder. I have used my own measurements (didn't follow any of my previous cakes) and was crossing my fingers. When I tasted the batter (yes I do that to check the consistency and sweetness) I got my confidence back. It came out pretty good. My kids enjoy it as evening snack also as morning breakfast cake

All purpose flour - 1/2 cup
Whole wheat flour - 1/2 cup
Milk powder - 1/4 cup
Semolina / rava - 1 tablespoon (heaped)
Butter - 65 g
Milk - 1/2 cup
Water - 1/2 cup
Yogurt - 2 tablespoon
Sugar - 3/4 
Baking powder - 1.25 teaspoon
Baking soda - 3/4 teaspoon
Chopped almonds - 1/4 cup
Vanilla essence - 1 teaspoon


Sift all purpose flour, wheat flour, milk powder, baking soda, baking powder twice. 
Beat room temperature butter, vanilla and sugar. Heat the milk and water to luke warm and add to the butter. Add Yogurt and mix well
Add dry ingredients into the wet in two batches. mix well.
Apply butter onto baking dish and dust it with flour. Pour the cake batter and tap on the counter top to remove the bubbles and level it. Sprinkle chopped almond on the top. 
Pre heat oven at 180 degree C. Place the baking tin and bake it for 20-22 mins at 180 degree C.Or till inserted toothpick comes out clean. Let it cool down completely. Slice it to your preference
