Pesto vegetable sandwich - Spring Onion pesto sandwich - Healthy breakfast, Brunch recipe - Snack recipe

We love pesto. Originally I made pesto for making pasta.. Nowadays my kids are at home. Since during school days they have mostly bread toast when they are at home I try to do sandwich or wrap or waffles. So I decided to do Grilled Pesto sandwich. You can choose your favourite vegetables for making this sandwich. I made it with Bell pepper, Eggplant. 
Ingredients:

Mixed vegetables of your choice -  1.5 cup (I have used Green bell pepper, yellow bell peppler, Eggplant )
Garlic pods - 7-9 (chopped finely)
Bread - 8 slices
Butter for toasting bread
Olive oil - 3 teaspoon
Grated cheese - 2 teaspoon per sandwich (Optional)

For Pesto

Coriander leaves - 1/2 cup
Basil leaves - 3/4 cup
Green chillies - 2
Pepper powder - 1/2 teaspoon (adjust to your spice level)
Parmesan cheese - 1/2 cup
Olive oil - 1/4 cup
Salt to taste
Garlic - 5 pods
Almond / Walnut - 7-10

Method

Grind all the ingredients under for Pesto section (I didn't add any water).I normally grind all the ingredients except olive oil and cheese first. Then add Cheese and olive oil to grind again. .
Heat olive oil in a pan. Add garlic and fry till slight brown in color. Add capsicum and fry for 2 mins. Add Eggplant and salt. Cook it.
 Add sliced Pesto paste. Fry for another 3-5 mins in low flame. Remove it and keep it aside
Butter the bread and place it on flat tawa or sandwich maker and spread the pesto and cheese. 
Place another buttered bread on the top with buttered side on top (as in pic) Toast the bread. If you are using the flat pan then toast the bread and close off the sandwich to serve (See my broccoli sandwich for detail steps for flat pan)
Serve hot
