Eggless Carrot muffins recipe - Eggless baking recipe - Simple breakfast recipe

During holidays I make dishes without bread. During last week's school holiday I wanted to do some muffin for breakfast. I found a recipe for whole wheat carrot muffin here. I kind of like it because it is made with whole wheat and with Carrot. It perfectly fitted my criteria for breakfast. Here you with the recipe


Wheat flour - 1 & 1/4 cup
Sugar - 1/2 cup ( I have used Brown sugar)
Vanilla essence - 1 teaspoon
Curd / Yogurt - 1 cup
Baking soda - 1/2 teaspoon
Baking powder - 1teaspoon
Carrot - 1/2 cup
Oil - 1/4 cup + for greasing baking dish


Sift together Wheat flour, baking soda, baking powder. In a wider bowl add oil and yogurt and whip it
Add Sugar and vanilla essence and mix well till sugar dissolved
Add sifted flour and fold it together. Add grated carrot mix well 
Grease the baking dish (muffin mould) pour the batter into it.
Pre heat the oven at 180 degree C. Place the baking dish and bake it for 20-22 mins at 180 degree C or bake till the inserted tooth pick comes out clean. Let it cook down completely
