I love making kootu as it is simple and it goes well with steamed hot rice, pulka or roti. This can be a pretty good meal replacement after festive feasting or weekend indulgence. Beet is one vegetable all of our family member love in any form. So it is a must in my weekend grocery list. Most of the time I make Beet poriyal, Beet chutney and Beet Rice. Making kootu with Chana dhal is my favourite. I wanted to post this for a while. Here you go with the recipe
Ingredients
Beet root - 2 (peel the skin and cut into small 1/4 inch cubes)
Chana dal / Bengal gram dhal - 3 tablespoon
Red chilles - 1 or 2
Mustard seeds - 1 teaspoon
Urad dhal - 1 teaspoon
Curry leaves - 10
Oil - 2 teaspoon
Salt to taste
Coriander leaves - 2 tablespoon (chopped finely)
To grind
Small onion / Shallots - 6
Green chillies - 2-3 (adjust to your spice level
Cumin seeds - 2 teaspoon
Coconut Gratings - 1/4 cup
Roasted gram dhal / Pottukadali - 3/4 tablespoon
Method:
Grind the ingredients under To grind section with required water. Keep it aside
Cook Beet, Channa dal with required salt. I pressure cooked till 2 whistle
Heat the pan with oil. Add mustard seeds let it pop. Add curry leaves and urad dhal. Fry till dal is brown in color. Add Grinded paste. Fry for 2 mins
Add cooked beet and mix well. Cook till desired consistency. Add coriander leaves
Switch it off and Serve hot
