My kids used to take Mayo sandwich (which I will post soon). However I stopped making it too often.. These days I am replacing Mayo with Greek yogurt. It provides nice alternative to Mayo. It is healthier too. I make this yogurt mixed vegetable for my weekend brunch / breakfast. It is really very refreshing and good energetic start for the day. Good after workout too
Ingredients

Yogurt - 3/4 cup (Hung yogurt. I have used greek yogurt)
Mixed vegetables - 3 cups (Carrot, Bell pepper, cucumber, cabbage)
Pepper powder - 1 teaspoon
Roasted Cumin powder - 1/2 teaspoon
Salt to taste
Spring onion - 1/4 cup (chopped finely)
Coriander leaves - 1/4 cup (Chopped finely)
Bread - 10 slices
Bread butter - optional

Method:

Mix in yogurt, pepper powder, cumin powder and salt. Mix in well. Add all the mixed vegetable. Mix well
Add Coriander leaves and spring onion and mix well.
Toast the bread Spread yogurt mixture. Close it with toasted bread. 
Serve hot
