Achari vegetable fried rice - Simple one pot meal

One pot meal really great time saver. Also perfect for lazy days or for a party. It is a must during weekends for me. Mixed vegetable base rice is my favourite for it's nutritional value. It is also good way to finish up the left over vegetable.. Do u agree?. This rice has taste of pickle because the spices used for gravy is similar to pickle
Cooked Basmati rice- 2 cups (I have used Brown rice)
Mixed vegetable- 2 cups
Cloves- 2 
Cardamom- 2 
Cinnamon- 1 inch stick 
Saffron- 2 pinches 
Shahjeera (caraway seeds)- ½ tsp 
Milk- 1tsp Bay leaf- 1 
Oil/ghee- 3 tablespoon (I have used oil) 
Salt- as per taste 
Garlic -5 Pods (sliced thinly)
Onion- 1 (sliced thinly)
For achari preparation 

Curd- ½ cup 
Turmeric powder- ½ teaspoon
Fennel seeds- ½ teaspoon
Mustard seed- ½ teaspoon
Meethi dana (fenugreek seeds)- 4 teaspoon
Cumin seeds- 1 teaspoon
Mustard oil - 3/4 teaspoon
Salt- as per taste 

Cook the rice and keep it aside.
Blend curd, green chilli pickle, turmeric powder, mustard, fennel, cumin, fenugreek seeds, mustard oil from salt. Blend until it is smooth. 
Now heat oil/ghee in a large pan. Season with shahjeera, cinnamon, clove, cardamom and bay leaf. Add garlic and fry till brown color. Add onion and fry till transparent
Add mixed vegetables and salt. Let it cook.
Add grinded yogurt paste. Add turmeric powder. Add cooked rice and mix well.
Serve hot
