Amras Ke Malai Aloo - Mango Potato gravy - Side dish for rice, roti, dosa

I love any dish with mango. This dish I tasted at my friends house during my biz trip. It had a very unique taste. They served this gravy for rice. And I asked for recipe. She passed me the recipe.. it is really simple and a blend of different flavours. I didn't have muskmelon seeds and watermelon seeds. I brought it in my last week trip to India. So I was able to try this dish during this mango season itself

Ingredients:

Potatoes - 2 (Medium)
Mango pulp - 1/3 cup (I have used fresh mango and grind to paste)

Ginger - 1 inch
Garlic - 5 pods
Onion - 2 (medium)
Watermelon seeds - 1 teaspoon
Muskmelon seeds - 1 teaspoon
Shahi Jeera ( Caraway seeds) - 1/4 teaspoon + 1/2 teaspoon
Pepper corns - 5
Cardamoms - 2
Cloves - 3
Green chillies - 1 (Slit into 2)
Yogurt - 3/4 cup
Red chilli powder - 3/4 teaspoon ( adjust based on ur spice level)
Turmeric powder - 1/4 teaspoon
Salt to taste
Garam masala powder - 1 teaspoon
Oil - 1.5 tablespoon
Fresh Cream - 1 tablespoon
Saffron - a pinch (I didn't use it because my family is not found of it)



Method:


Cook the potato and slice it into small cubes. Keep it aside. Dry roast 1/2 caraway seeds, pepper corn, cardamoms, cloves. When it cool down powder it

Grind melon seeds, muskmelon seeds with water. 
Heat a teaspoon of oil. Add ginger, garlic. Fry till slight brown color. Add onion and fry till brown color. Switch it off. Grind garlic/ginger/onion into smooth paste. 
Heat rest of oil in the pan. Add 1/4 teaspoon caraway seeds, green chillies, 1 cardamom, 2 cloves.Add grinded ginger garlic onion paste. Add red chlli powder, turmeric powder, garam masala powder. Fry till raw smell goes off
Reduce the flame and add Melon seed paste. Mix well. Add required water. Let it boil
Add Mango pulp, Potatoes and powdered masala mix well. Let it cook for another 3 mins
Reduce flame. Add yogurt. Let it boil for 5 mins.  Add cream and just fold it. and add coriander leaves. Switch it off. Don't boil it after adding cream
Serve hot with rice / roti / paratha / poori
