Coconut Milk Veg Biryani Recipe - Thengai Paal Biryani - Simple one pot meal recipe

I love to make one pot meal for the ease of cooking. My kids love it too. So I make one pot meals for Sunday lunch. Vegetable biryani is one of most favored one pot meal at our house hold. I have posted other 2 versions one with yogurt, Other one is my mum version which is with coconut. This one is simple one with coconut milk. Very fast to make yet very satisfying Imea.l Perfect party food too
Ingredients:

Basmati rice 1 cup
Cut (into 1 inch) vegetables (peas, beans, carrots, Potato) -1 cup 

Onions 1 big size cut lengthwise
Green chillies 5-6 depending on spiciness
Coconut milk - 1 cup
Mint - 8-9 leaves - optional

Coriander leaves - 1/4 cup (chopped finely)
Lemon juice from half a lemon - optional

Water 1 1/4 Cup
Bay leaf 2
Cinnamon 1 inch stick

Cloves - 3
Cardamom - 4

Kal pasi - 1 
star spice - 1
Red Chilli Powder - 1 teaspoon
Gram Masala Poweder - 1/4 teaspoon
Oil (butter makes the biryani taste even better) - 3 tablespoon



Method:

Soak the rice for 10 mins. Drain it. Heat the pan and add bay leaves, cinnamon, cardamom, kal pasi, star spice. Fry till nice aroma comes. Add onion and fry till transparent.
Add All the vegetable and salt. Fry for 2 mins. Add water and let it boil. Add coconut milk and mint leaves. Mix well. Let it boil
Add rice and close the lid. Let it cook. Add coriander leaves and mix well
Switch it off and serve hot
