I love Kheer. esp for breakfast it is quick and easily can make it as healthy as you want. For this one I had added Jaggery instead of sugar and didn't use any Ghee. Richness for this kheer comes from Almond and Cashew paste. If you want it more rich then fry Foxtail millet in a teaspoon of ghee.
Ingredients
Foxtail Millet / Thinai Rice - 1/4 cup
Milk - 2 cups (I have sued slim milk.)
Almond - 10
Cashew nuts - 10
Jaggery or Sugar to taste - (2 tablespoons to 1/4 cup. I use less sugar so I have added 2 tablespoon of Jaggery)
Baked almond few for garnishing
Salt a pinch
Cardamom powder - 1/4 teaspoon.
Soak Almond / Cashewnuts in warm milk for 30 mins. Grind to smooth paste.
Cook Foxtail millet with 1 cup of water. Mash it. Add Keep it aside.
Add Jaggery. Mix well. Add grinded paste. Let it boil.

Add cooked foxtail millet and cook to desired consistency. Stir continuously. Add Cardamom powder and baked nuts and mix well...
Enjoy it either hot or cold
