My kids love cookies. They love shortbread. My son was asking me to do chocolate shortbread cookies. However my husband is not a big fan of full chocolate cookies. I decided to try out checker cookies. In the end every one was happy :-)
Ingredients:
In broader bowl take butter and icing sugar and beat it till it is creamy and smooth. Scrap the sides as required. I have used hand mixer. Now add Vanilla extract and beat again. Now add Flour and bring together with your hands into stiff dough.
Divide the dough into 2 equal portion. Melt the chocolate chips and add that to one half of the dough. Mix well.
Now divide the vanilla dough into 2 and chocolate dough into 2. Shape the dough as shown in the pic. Wrap the dough in plastic wrap and keep it in refrigerator for an hour.
Take out the dough and slice then into thin cookies. Line the baking tray with parchment paper.
Arrange the cookies in the baking tray. Pre-heat the oven at 180 degree C. Bake the cookies for 10-12 mins or till the cookies are slightly browned. Cool it completely
Store it in air tight container and enjoy it
