Rich Cashew Paneer - Simla Mirch Paneer - Simple paneer recipe - No Onion, Garlic recipe

In my last India trip I visited a restaurant. Whenever I visit restaurants I tend to look for Spinach and Paneer based recipes. My kids love it. So wanted to look for any new dish. This is the dish I found during my last trip and it was so rich. From the first bite I knew my kids would love it. I cannot wait to get back anf try. It came out pretty well and as I was expecting, my kids loved it. I bet this is one of the very simple paneer recipe

Red Bell Pepper - 2 (remove the seeds and slice them into 1 inch cube. 3 cups when u cut)
Tomatoes - 1 
Cardamom pods - 4 or Cardamom powder - 1/2 teaspoon
Green chillies - 2-4 (adjust to your spice level)
Red chilli powder - 1/2 teaspoon (adjust to your spice level)
Salt to taste
Paneer - 250 g
Cumin seeds - 1/2 teaspoon
Coriander leaves - 1 tablespoon (finely chopped)
Dry kasoori methi - 1 teaspoon (soak it in hot water)
Cashew Nuts - 2.5 tablespoon
Oil - 1 teaspoon


Heat the pan and add 1/2 teaspoon of oil. And add paneer cubes and fry till they are brown. Keep it aside
Heat 1/2 teaspoon of oil in a pan add cashew and Red bell pepper. Fry till Red bell pepper is half cooked. Add green chillies and fry for another 1 min. Switch it off and let it cook down.
Grind to smooth paste with chopped tomatoes
In the pan add 1/2 teaspoon of oil. Add Cumin seeds and let it crackle. Add grinded paste and fry for 30 sec. Add Red chilli powder, Turmeric powder, Salt, 1 cup of water. Let it boil. 
Add fried paneer. Boil for another min. Add Dried Methi leaves and boil till desired consistency is reached. 
Switch it off. Add coriander and mix well. 
Serve hot with fried rice or roti.
