Quinoa upma - Qunioa Savory salad - Healthy breakfast, lunch, dinner

I love quinoa. I do cook Quinoa at least 4 times a week. I have this for any meal. It is really quite versatile for me. I normally make this upma for my breakfast or lunch box. It keeps me full for very long time..If I do it for myself I will add a lot of onions which I think adds flavour to this. 

Cooked quinoa - 3 cups
Mixed vegetables - 1 cup to 1.5 cups ( I wanted to have more vegetables. I have used Beans and carrot)
Onion - 1 (sliced thinly)
Mustard seeds - 1/2 teaspoon
Urad dhal - 1 teaspoon
Bengal gram dhal - 1 teaspoon
Green chilles - 3 to 4 (adjust to your spice level)
Curry leaves - 10
Coriander leaves - 1 tablespoon
Salt to taste
Oil - 2 teaspoon


Heat the pan and add oil. When it is hot add mustard seeds and let it pop. Add curry leaves, green chillies, urad dhal and bengal gram dhal and fry till it is brown in color. Add onion and fry till transparent. 
Add vegetables and fry for 30 sec. Add Cooked Quinoa. Mix well
Close the lid and cook till water evaporates. Add coriander leaves and mix well
Serve hot.
