Tofu Masala - Healthy side for rice, roti, chapathi - Simple and healthy vegetarian gravy

We love Tofu. I almost make it every other day. Other day we had very heavy meals in the afternoon so for the night I wanted to do simple meal. But I didn't soak any dhals and I wanted something quick and healthy. I had some Tofu in the fridge. Since my kids love Tofu dishes I have decided to try out Simple Tofu Masala. With Tofu and yogurt in this dish is very high in protein. 

Fresh Yogurt (make sure it is not sour) - 1/2 cup
Onion -1 
Tomatoes - 2 to 3 (depending on your yogurt sourness)
Garlic - 5-7
Ginger paste - 1/2 teaspoon
Bay leaves - 1
Clove - 3-4
Star masala - 2
Cinnamon - 1 inch
Cumin seeds - 1 teaspoon
Coriander powder - 1 teaspoon
Red chilli powder - 1/4 teaspoon
Turmeric powder - 1/4 teaspoon
Green chillies - 2-3 (adjust to your spice level)
Fenugreek leaves  - 1 teaspoon
Oil - 3 teaspoon
Salt to taste
Coriander Leaves - 1 tablespoon (finely chopped)
Cream - 1 tablespoon


Heat .5 teaspoon of oil and shallow fry Tofu. And keep it aside.
Heat 1.5 teaspoon of oil. When hot add garlic and fry till they are slightly brown. Add onion and fry till transparent. Add tomatoes, green chillies. Fry till mushy. Add turmeric powder, red chilli powder, Coriander powder and salt. Fry till raw smell goes off. Switch it off and let it cool down. Once cool down grind to smooth paste
Heat rest of the oil. Add bay leaves, cinnamon, cloves, star masala and fry till nice armoa released. Add cumin seeds. Let it crackle. Add grinded paste. And boil for a min. Add whipped yogurt and mix well. Let it boil. Add Fried tofu and fenugreek leaves and mix well. Let it boil for another 3-5 mins. Add Cream and mix well

Switch it off. Garnish it with coriander leaves. Serve hot
