Soya Chunks Briyani

Soya Chunks is one of our family favourite.. I normally do this rice quite often. This rice doesn't require any coconut and has very minimal masala. Since it is high in protein, it is a good lunch box item for kids. This will keep them full , provide protein need and keep them energized

Basmathi Rice - 1 cup
Soya Chunks - 50 gram
Turmeric powder - 1/4 teaspoon
Curd - 1 1/2 tablespoon
Salt per taste
Onion - 1 (Finely chopped)
Vegetable Stock - 1 cup
Bay Leaves - 1
Cinnamon - 1 inch
Cloves - 4
1 tablespoon of oil

Fry and grind to smooth paste

Garlic - 5 Pods
Ginger - 1 inch
Green Chilli - 3
Red Chilli powder - 1/2 teaspoon
Mint leaves - 1/4 Cup
Coriander Leaves - 1/2 cup
Small Onion - 3 sliced thinly
Oil - 1 teaspoon

Heat a teaspoon of oil and fry all the item under fry and grind to smooth paste section above. When it is cool down grind to smooth paste
In a saucepan add 2 cups of water and let it boil. Switch it off. Add 1 tblsp of milk and the soya chunks to it. Let it sit for 15 minutes. when it is done, drain the water and squeeze the soya chunks to take out the extra water (when the water is cool down to lukewarm)
Wash the rice and soak for 10 mins. Drain the water and keep it aside 30 mins.Heat the kada and add a teaspoon of oil and fry the rice till moisture absorbed. Keep it aside
Heat the kada and add rest of the oil. Add bay leaf, Cinnamon and Caradamom fry till nice aroma comes. Add chopped onion and fry till onion is slight brown color. Add masala, curd, soya chunks and salt and fry for another 3-5 mins. Add Vegetable stock, 1 1/2 cup of water, rice and salt. Let it boil and transfer to rice cooker to cook it
Serve with your favourite raitha / yogurt
