I have posted Chinese Fried rice before. However whenever I eat fried rice in the shops / restaurant I get slightly different taste. I was talking to my friend and was mentioning this and asked her how they make fried rice at home. She was mentioning about adding Vinegar. So I have decided to give it a try. I also love fried rice because of pepper. So here you go with my 2nd version of Chinese fried rice
Ingredients
Mixed vegetables - 2.5 cup ( I have used beans, carrot, cauliflower)
Cooked basmati rice (you can use any long grain rice) - 4 cups
Pepper powder - 1 teaspoon
salt to taste
Spring onion - 1 bunch (separate the white portion and chop it)
Soya sauce - 2 teaspoon
Sesame oil - 1 tablespoon
Vinegar - 1/2 teaspoon
Method:
Heat oil in a pan and add white portion of spring onion and garlic. Fry till garlic is brown in color. Add vegetable and fry it in high flame for about 3-4 mins. Make sure the vegetables are not soggy. Add pepper, salt, soya sauce and vinegar. Mix well. Fry for another 2 mins. Add cooked rice mix well. Fry it in high flame for 3-4 mins. Add spring onions and mix well.
Serve hot. I served with Schezwan baby potatoes. You can also try Vegetable Manchurian Gravy
