Cilantro Asparagus and Lime rice - Coriander asparagus and lime rice - Simple rice recipe - Simple lunch box recipe

My son has requested for rice which is less in masala, light and tasty. I had some Asparagus in the fridge. I wanted to make use of it. So I decided to make Cilantro asparagus and lime rice.. Everyone loved it.. It is perfect for light and tasty meal. This is so simple that even bachelors can try it out. It is also good option to include healthy vegetable like Asparagus which is seldom used in Indian meals

Ingredients:

Cooked Basmati or brown rice - 2 cup
Asparagus - 1.5 cup (chopped into 1/4 inch pieces. If you want to put as long pieces pls. go ahead)
shallots / small onion / sambar onion - 5
Garlic - 5 pods
Green chillies - 4 (Adjust to your spice level)
Cilantro / Coriander leaves - 1 cup
Cumin seeds - 1 teaspoon
Oil - 1 teaspoon ( I have used olive)
mustard paste - 1/4 teaspoon ( I have used yellow mustard paste)
Butter - 1/2 teaspoon (Optional but it gives nice flavour to rice)
Lime juice - 3/4 teaspoon
Salt to taste

Method:

Clean coriander leaves, peel garlic and onion. Wash them & wash green chillies. Grind together with very little water. 
Heat the pan with oil. add cumin seeds let it crackle. Add Asparagus and fry for 2 mins. Add grinded paste. Fry for 3 mins in medium flame. Add salt, mustard paste and mix well. Fry for couple of mins. Add cooked rice and butter. mix well. Now add lime juice mix well
Serve hot. Enjoy this simple and flavourful rice with your favourite side dish
