Cauliflower Sambar - Side dish for rice / dosa / idli

My mum makes this sambar with Tomatoes. However I wanted to try with cauliflower. My husband and kids like this version of sambar. It is kind of fusion between sambar and korma. It goes very well with rice / dosa / idli. It is very good change to the regular parrupu sambar

Cauliflower - 1 cup (separate into flowerlets)
Thoor Dhal / thuvar dal / Toor dal - 1 cup
Tamarind - 1 marble size (soak it in 1/2 cup of hot water and take tamarind juice out of it)
Onion - 2 teaspoon (finely chopped)
Tomatoes - 1/2 (chopped into wedges or chopped finely according your preference)
Sambar powder - 2 teaspoon
Garam masala - 1/4 teaspoon
Coconut - 3 tablespoon
Turmeric powder - 1/4 teaspoon
Salt to taste
Oil - 2 teaspoon
Mustard seeds - 1/4 teaspoon
Dry Red chillies - 1 Broken into 2
Urad dhal - 1 teaspoon
Fennel seeds - 1/4 teaspoon
Curry leaves - 20
Asafoetida / asafetida - a generous pinch
Coriander leaves - 1 tablespoon


Pressure Cook the toor dal with enough water till 4 whistles. Mash it. Keep it aside. Grind coconut, turmeric powder, sambar powder and garam masala with enough water into nice paste. 
Heat the oil in a pan add mustard seeds let it pop. Add urad dhal, fennel seeds, red chillies and curry leaves. Fry till dhal is brown in color. Add onion and tomatoes. Fry till tomatoes are mushy. Add cauliflower and fry for 1 min. Add tamarind water and it it start boil. Now add cooked dal and mix well. 
Add grinded paste and mix well. Add water to get desired consistency. Add salt mix well. Close the lid and cook the cauliflower. I have pressure cooked for 2 whistle. When it is ok to open the lid and add coriander leaves. 
Serve hot with idli / dosa or rice
