Spicy Peanut Butter Noodles - Simple dinner recipe - Kids friendly recipe

My kids love the peanut butter (tell me who doesn't).  They love to try different noodles. Near my house we have one small health product shop which sells different kind of noodles. So for the weekends I try to do different kind of noodles. People have the general notion that noodles are not healthy but you can really turn them into healthy meal based on type of noodles you use, seasoning you do. Well I can hear you saying enough of justification to have noodles.. Ok... over to the recipe


Noodles of your nice - 300g ( I have used quinoa flour noodles)
Creamy Peanut butter - 4 tablespoons ( I have used low fat creamy butter)
Soya sauce - 2 tablespoon
Vinegar - 1.5 tablespoon
Green chillies - 4 (Split into 2. You chop finely too)
Sriracha sauce - 1 to 2 teaspoon (adjust to your spice level )
Garlic - 6 pods (finely chopped)
Ginger - 1/2 inch (finely chopped)
Carrot  - 1/2 cup (thinly sliced)
Green Capsicum - 1/4 cup (thinly sliced)
Salt as required (I didn't use it at all salt from butter and noodles was good enough)
Oil - 2 teaspoon
spring onion - 2 teaspoon (finely chopped)
Cilantro / coriander leaves - 1 tablespoon (finely chopped)
Toasted / dry roasted sesame seeds - 2 tablespoon

Cook the noodles per package and keep it aside. 
Heat the oil in a pan and add garlic and ginger. fry till garlic is brown in color. Add Carrot and green capsicum and fry for 2 mins. Add peanut butter, vinegar, Green chillies, soya sauce, Sriracha sauce and mix well. Let it cook for another 2-3 mins in low medium flame.

Add noodles and sesame seeds and mix well. Cook for another 2-3 mins. Add coriander leaves and spring onion and mix well.

Serve hot
