Paneer Paratha - Paneer stuffed chapathi - Paneer stuffed roti - Simple dinner recipes - Kids friendly recipe

My kids love anything with Paneer. Paneer and mushroom are a must for every week. Making stuffed chapathi / roti always scares me.. Trust me, practice makes it perfect. I am learning every time. This stuffing is very simple and tasty. Perfect for kids balanced lunch box. For me this Paratha doesn't require any side dish. Just serve with yogurt or pickle

For Dough

Atta - 2 cup
Salt per taste
Oil - 1.5 teaspoon oil
Water for making dough

For Stuffing

Paneer - 2 cups (grate it. I have used homemade Paneer)
Green chillies - 3
Coriander leaves - 1 tablespoon
Ajwan - 1/2 teaspoon
Dry mango powder - 1/2 teaspoon
salt to taste

Oil for cooking parathas

Mix Atta, salt, oil in broader vessel. Add water to make soft pilable dough. Keep it aside

Cramble paneer with hand in mixie / blender. Grind green chillies and mix it with paneer. Add ajwan, dry mango powder, coriander leaves and salt. Just pulse the mixer. Mix well. Divide them into equal size balls.Keep it aside

Now take equal size of dough and roll it into medium size circle. Keep one of the paneer ball in the center and close the dough. Seal all the sides carefully. Flatten it using plam. And roll it into thick paratha. Make sure the paneer not coming out. Repeat the process till all parathas are done.

Heat the flat pan and when it is hot add the rolled parathas and drizzle oil around it. Once cooked turn to other side and cook other side also. 

Serve hot with Yogurt / pickle or favourite chutney
