Bell Pepper, Corn and Cheese Sandwich - Simple breakfast recipe - Simple brunch recipe - Kids snack recipe - Kids lunch box recipe

Capsicum and Cheese is a match made in heaven. My kids love this combo in any form. One of the weekends I wanted to try some simple sandwich for brunch. Kids loved this and asked it for their lunch during the week that followed. You can also try this out ... It is good for kids lunch box recipe. You can add about 2 tablespoons of onion to this recipe. I didn't add since my kids are not a big fan of onion pieces

Bread - 6 slices (Used wholemeal bread)
Red Capsicum & Green Capsicum - 1 cup (combined)
Corn kernels - 1/4 cup ( I have used frozen and microwave it for 2 mins)
Italian mixed herb spice - 1/2 teaspoon
Salt to taste
Oil - 1 teaspoon
Bread cheese - 2 (I have used 60% less fat from Kraft)
Butter for bread toast


Heat the kada and add oil when it is hot add capsicum and fry for 2 mins. Add corn mix well. Add salt and Italian mixed herb mix well. Fry for another 2 mins. Switch it off and keep it aside.
Appy butter and place them on toaster buttered side touching the grill. Spread the Capsicum mixture on the bread and spread it (Divide the stuffing into 3 equal parts). Place one cheese on top of the capsicum mixture. Now apply butter on another bread and place this on the stuffing (buttered side should be outside as you can see in the pic). Now close the toaster and toast it till the bread is in desired brown color. If you don't have Toaster you can do this on flat pan. To do that Follow till placing the cheese. Now cook the bread till the cheese is melted. And remove it from Pan. Toast the 2nd bread and place it on the cheese bread and serve the sandwich
