I love kheer. I think that is most of recipe in my space.. It is so easy to make it healthy and very simple to do. To me it gives nice flavour to otherwise boring plain milk. This is one way of taking my daily serving of milk. In addition both my hubby and 2nd son love it. So it is good excuse to do more often right?
Milk - 500 ml (I have used low fat milk)
Makhana / foxnuts / lotus seeds - 1 cup
Cardamom powder - 1/4 teaspoon
Jagger - 1/4 cup (adjust to your preferred sweetness. You can go up to 1/2 cup)
Almonds - 1 tablespoon (sliced thinly) ( I have used baked almonds)
Dry roast Makhana on medium flame for 2 mins till they become crispy. Let it cool down. Take half of it and grind to coarse powder. Keep it aside
Heat jaggery and water in the same pan or kadhai. Once jaggery is completely dissolved, remove from the heat and strain it to remove the dirt or impurities.
Boil the milk and add it to jaggery. Mix well. Add coarse Makhana. Cook for another 2 mins. Add rest of makhana and cardamom powder. Cook for another min or 2. Add Almond and switch it off
Serve hot or cold
