Cauliflower soup

This soup recipe is simple vegan soup. It is very creamy in texture and quite filling. I always prefer to make soup with some vegetable. You can really feel the flavour of the vegetable in the soup. In this I have added potato to get the smooth texture. This soup is very comforting. I have served this with toasted bread.
Ingredients

Cauliflower flower lets - 2 cups
Potato - 1 (peeled and diced)
Onion - 1 chipped finely
Garlic - 5 cloves ( chopped finely)
Ginger  - 2 inch
Green chillies  - 2 (slit into 2)
Coriander leaves / cilantro - 2 tablespoons
Green Spring onion - 2 tablespoons (optional)
Salt to taste
Pepper Powder - 1 teaspoon (as required)
Oil - 1 teaspoon

Method:

Heat pan and add oil. When it is hot add garlic and fry till brown in color. Add onion and fry till it is transparent. Add Green chillies, Ginger and fry for a min. Add cauliflower and Potato and fry for another 2 mins. Add 3 cups water and salt and cook it. Switch it off
When it cool down drain the water and remove ginger and green chillies. Discard ginger and green chillies. Reserve 1 tablespoon of cooked cauliflower and grind rest of Cauliflower and potato into smooth post.
Heat the drained water first. When start to boil add cauliflower paste, reserved cauliflower (1 tablespoon) and mix well. Let it boil. Add Pepper powder and green spring onion and mix well. 
Serve hot with toasted bread
