Kimchi rice noodles recipe

I love Kimichi flavour. All these days I am in search for vegetarian Kimichi paste. So when I first saw this near my place I picked up without any hesitation. Originally I was planning for Kimichi rice. But my kids wanted noodles. So ended up doing Kimichi rice noodles.
Rice noodles - As required (used dry ready made noodles)
Bok choy - 5-6
Fried Tofu - 6-7
Carrot - 1/4 cup (sliced thinly)
Onion - 1 (Finely chopped)
Garlic paste - 1 teaspoon
Ginger paste - 1/2 teaspoon
Kimchi Paste - 1/2 cup (mine was not spicy so I have used more. But go with your spice level)
Salt to taste
Oil - 1 teaspoon
Green chillies - 3-4 (Adjust to your spice level)

Heat the pan and add oil. when it is hot add onion and fry till transparent. Add Garlic and ginger paste and fry for 30 sec. Add Carrot and fry for a min. Add bok choy and fry for a min. Add Kimchi paste and fry mix well. Add 4 cup water. And salt. let it boil Add fried tofu and bean sprouts. Mix well. Let it boil for another min. Switch it off
Cook the rice noodles per instruction on the pocket. Keep it ready

When it is ready to be served. Add required amount of noodles in the serving dish. And pour the hot soup on top of it. Serve hot.
