Roasted Bell Pepper Pasta

My kids love pasta. I can hear you saying which kids doesn't... I normally try to do different type of pasta esp pesto using vegetables. I love roasted vegetables. So I wanted to try Red bell pepper pesto pasta. Normally I try to do pasta for Friday dinner as I am so exhausted do something elaborate and what kids like. Pasta comes in handy in those situation. I find this Pesto so flavourful and hard to resist

For Pesto

Red Bell Pepper - 3 small (when you roast and cut it will come about 1.25 cups)
Coriander Leaves - 1/2 cup (roughly chopped with stems)
Small onion - 4-5
Garlic - 3-4
Parmesan cheese - 1 tablespoon
Salt to taste
Pepper corn - 1 teaspoon (adjust to your spice level)
Red chillies flake - 1/4 teaspoon
Walnut - 10-12
Olive Oil - 1/2 to 1 teaspoon

For Pasta:

Pasta - 2 cups
Cheese - 3-4 tablespoon of your favourite cheese ( have used Cheddar)
Garlic- 5-7 Pods
Olive - 1 tabespoon (sliced thinly ) - Optional
Salt to taste
Mixed Italian herb - 1/2 teaspoon


For Pesto:
Wash and wipe the red bell pepper clean and apply olive oil around it. Roast it on a open flame till they are charred completely. Remove from the fire and keep it in closed bag or vessel for 10-15 mins. This will help in peeling the skin. Peel the skin (If you prefer to wash you could) and chop them into 1/4 square pieces.
Grind together chopped bell pepper, small onion, garlic, coriander leaves, pepper corns, walnuts and parmesan cheese into smooth paste. Add Red chilli flake and run the mixer for another 10 sec. 

Note: As an alternative to open flame roasting you can roast bell pepper in microwave at 180 degree C for 35-40 mins (till fully done and charred)
For Pasta:
Cook the pasta according to the instruction on the package
Heat the olive oil in kadai, When it is hot add garlic and fry till they are slight brown in color. Add Bell Pepper pesto, Mixed Italian herb and fry for another 1 min. Adjust the consistency of the pesto by adding water. Add cooked Pasta and mix well. Cook for another 2 mins. Add Cheese and mix well. Cook till cheese is melted. 
Switch off and serve hot
