My kids love Mushroom. Most of the time I end up doing Pizza with it. My kids love it simple Mushroom and cheese pizza. Mushroom Rice and Mushroom Gravy (in fact any mushroom) are favourites too. Few weeks ago when we dined out I tried Kadai mushroom and it was pretty good. So I was pretty sure that our family will love it. So here you go with recipe
Ingredients:
Onion -2 (Chopped finely)
Tomato - 3 (Chopped finely)
Mushroom - 500 g (Wash and slice into 1/2 inch pieces)
Capsicum - 1 ( I have used green. Dice it to 1/4 inch cube. the cut one is about 1/3 cup)
Ginger Garlic paste - 1 teaspoon
Dry Red chillies - 1
Green Chillies - 2 (adjust to your spice level)
Cumin powder - 1 teaspoon
Garam masala powder - 1/4 teaspoon
Dry Kasoori Methi - 1 teaspoon
Coriander Powder - 1/2 teaspoon
Salt to taste
Oil - 1 tablespoon
Coriander leaves / Cilantro - 1 teaspoon
Method:
Heat the kada and add 2 teaspoon of oil. Add Onion and fry till slight brown in color. Add ginger garlic paste, Green chillie and Red chilli, fry for 30 sec. Add Tomato and fry till it turns mushy. Add cumin powder, coriander powder and garam masala powder and fry nice smell comes. Switch it off and let it cool down. Once cool down transfer to blender / mixie or food proecsser and grind to coarse or smooth (depends on your preference. My kids prefer it to be smooth)
Heat the kada again. Add rest of the oil. Add grinded paste and fry till nice armoa comes out. Add diced Capsicum and fry for another min or 2. Add diced mushroom and close the lid. Add water if needed. Mushroom releases water so take care of it when adding water. I have added only about 1/4 cup. Add kasoori methi and mix well. Switch it off
Serve hot with rice or roti or naan
