My husband prefer to have varitety at least 2 instead of single dish for dinner. Normally I do something simple like soup,salad or kheer. During my childhood my mum makes simple sweet aval with milk, sugar and aval. It is good quick after school snack. I like Jaggery over sugar. So my sweet version of aval is with jaggery without milk. This is simple to make yet very delicious. Enjoy this anytime of the day
Ingredients
Thick Aval/ Poha 1 cup
Jaggery - 1/2 - 3/4 cup
Coconut 3-4 tbsp(shredded)
Cardamom - 1/8 teaspoon(powdered or crushed)
Almond - 1 tablespoon
Ghee / oil - 1 teaspoon (Optional)
Ingredients

Roasted White sesame seeds - 1 teaspoon
Method
Dry roast the coconut without changing the color. Roasting about 1 and 1/2 mins is good enough
Clean and Wash Poha/ Aval. Soak Aval for 10 minutes and then drain completely and keep aside.
Dissolve jaggery in 1/4 cup or less water, strain the impurities and keep aside. ( I have skipped this step as I had Jaggery in the fridge). Heat the filtered jaggery water, bring to boil and to one thread consistency.
Add pinch of salt and cardamom powder. Mix well. Add the soaked and drained poha, mix well.
Once the moisture dries up, add shredded coconut and mix everything well.
Lastly add the nuts and mix well. I have used baked nuts and didn't fry it. If you are using raw roast the nuts in the teaspoon of ghee / oil

ReplyDeleteMy fav but have not eaten for a long time. For us, we soaked the aval and mixed it with the rest of the ingredient. I see that you have ghee and cardomom. This bring more welcoming flavors. We seldom add these and next time, I shall try with them.
