Jackfruit Seeds Sambar

I ran out of vegetables towards the end of the week. I wanted to make some sambar. I left with only few vegetables in the fridge. None of the usual sambar vegetables were there. My helper was suggesting to make jackfruit seeds sambar. I told her I never tried before. She assured me it will be tasty. So I have decided to give it a try. It came out pretty good

Heat the pressure cooker pan or stockpot. Add oil. When oil is hot add mustard seeds. Let it pop. Now add urad dhal, Fenugreek, asafoetida, curry leaves and red chili. Fry for 10 sec. Add Onion. Fry till it soft. Add jackfruit seeds and fry for another min. Add Salt, Turmeric powder, cumin powder and sambar powder. Fry for 3-4 mins.
Add Tamarind paste. Mix well. Let it boil for a min. Add cooked dhal and mix well. Add enough water (to your desired consistency. I have added 1.5 cups) and adjust the salt. Mix well.
