Tomato Pulav (Briyani)

Most of the time in fact all the time I use pre made tomato thokku (paste) to make tomato rice. However this weekend my son was asking for Tomato rice and I run out of paste. So decided to do Pulav / Briayani. I have used full coconut milk instead of substituting half with Soya milk. It is so simple and perfect lunch box item. If you are less masala person this recipe is for you
Ingredients:
Basmati rice - 1 Cup
Tomato - 3 (chopped finely)
Coconut Milk - 1 cup
Water - 1 cup
Onion - 1 (finely chopped)
Peas - 1/2 cup
Oil - 3 tablespoon
Clove - 2
Cardamom - 2-3
Bay leaves - 1
Cinnamon - 1/2 inch piece
Green Chilli - 3
Red chilli - 4-6 ( I have used 6)
Garlic - 6 Pods (peel it and chop it finely)
Ginger - 1/2 inch piece (peel the skin and chop it finely)
Coriander Leaves - 1 tablespoon (Finely chopped)
Mint Leaves - 1 tablespoon
Salt per taste

Method:

Take a cup of coconut and add 1 cup of hot water. Leave it aside for 2-3 min. Grind to smooth paste and drain the coconut milk.
Run it in mixieWash and soak the rice for 10 mins. Drain the water and leave it for 30 mins. Heat 1 teaspoon of oil and fry the rice till moisture is absorbed
Heat the kada and add 1 teaspoon of oil and add garlic, red and green chillies and Ginger. Fry till Garlic is slight brown in color. Add Mint leaves. And fry for another 1 min. Switch off and let it cool down. Once cool down make it to smooth paste and keep it aside.
Heat the kada. Add rest of the oil. When Oil is hot add Clove, Bay Leaves, Cinnamon, Cardamom and fry for 30 sec. Add Onion and fry for till onion is soft and slight brown in color. Add Tomato and fry till it is mushy. Add Salt, Peas (I have used frozen one). Mix well. Add water, coconut milk. And mix well.
Let it boil. when it is boiling add rice and mix well. Close the lid and let it cook. You can cook it in Rice cooker or pressure cooker (for 10 mins) also.
