Back then when I start my career I used to have Maharashtrian colleague. Poha is one of regular lunch box item. I love Poha also. She used to bring potato poha quite often I learned the recipe from her mother. It is so easy and healthy. My mum used to make poha / Aval more for after school snack than meal by itself. But after my marriage I do this for main meal. It has all my favourite ingredients Lemon, Poha / Aval. Peanut.. Yummy!
Ingredients
Potato - 2 Cook and dice into 1/2 inch cubes ( I used only 2 from below)
Green Chillies - 3-4 slit into 2
Mustard seeds - 1/4 teaspoon
Turmeric powder - 1/2 teaspoon
Urad dhal - 1 teaspoon
Bengal gram dhal - 1 teaspoon
Curry leaves - 10
Lemon Juice - 1 teaspoon
Salt per taste
Sugar - 1/2 teaspoon (optional)
Oil - 3 teaspoon
Peanut - 1/2 cup ( I love to use roasted.. if you prefer raw go ahead)
Asafoetida - pinch
Coriander seeds - 2 tablespoon (finely chopped)
Method:
Wash and soak the Aval till it is soft. Drain the water and keep it aside
Heat the kada and add oil. When it is hot add asafoetida, mustard seeds, Curry leaves, urad dhal, bengal gram dhal and fry till mustard start to pop and dhals are brown in color. Add chopped onions, green chillies. Fry till onion is soft. Add poha, turmeric powder, salt and mix well. Let it get cook
Add peanuts, diced potato and sugar(if using). Mix well. Let it cook for another couple of mins. Add coriander leaves, Pidina and lemon juice. Mix well. And switch it off.
