Cucumber Salad

I liked the Cucumber salad that I had at my friend house sometime ago. She gave me recipe but I misplaced. Given she is from Maharashtra I guessed the ingredients and made the salad. It came out to be very delicious not exactly same as I had at her place. I have used Store brought peanut powder. Otherwise you can dry roast the peanut, remove the skin and powder it in the mixie. This has become regular salad at our household as my family loves it.
Ingredients:

Cucumber - 2 Cups
Grate Coconut - 3 tablespoon
Green chilli - 3 (adjust to your spice level)
Peanut powder - 2 tablespoon
Sugar - 1 teaspoon
Cumin Seeds - 1/2 teaspoon
Mustard Seeds - 1/4 teaspoon
Asafoetida - pinch
Coriander leaves - 1 tablespoon
Curry Leaves - 5
Oil

Method:

Cut the Cucumber into small pieces. Add salt  and keep it aside. Remove the water (drink the water as juice!)
Grind the Coconut and green chillies into paste. Add peanut powder and sugar to this paste and mix it well
Heat small kada and add oil. When Oil is hot add mustard seeds and when it start to pop add cumin seeds when it start to crackle add Asafoetida and curry leaves and fry for 30 sec. Pour this over cucumber and mix it well

Decorate it with coriander leaves and mix it well
