Potato Fry

The way I do potato fry is different from back home at my mum's place. I have modified the recipe for my convenience. My mum does it by adding grinding coconut, fennel seeds, sambar powder. But I use only sambar podi and roasted gram and corn flour. But kids used this and they don't like the old traditional way.
Try it out you may like it also :-)


4 Potato (Big)
3 teaspoon Urad Dhal
Oil for frying ( I have used Olive Oil)
1 teaspoon mustrad seeds 
Curry leaves - a sprig
Roasted gram flour - 2 tablespoon
Corn flour - 2 tablespoon
sambar podi - 1 tablespoon
Turmeric Powder - 1/2 teaspoon
Salt as requred
Mustard Seed - 1 teaspoon

  • Pressure cook potato ( if the potato is new 2 whistle enough old one might need 4 whistle)
  • Peel out potato skin cut into medium bite size 
  • Heat the Oil in Kada
  •  Add mustard seeds
  • when it started to splutter add urad dhal
  • when urad dhal is brown add curry leaves
  • add cut potatoes
  • after 5 mins add sambar powder, turmeric, salt
  • after another 10 mins add roasted gram dhal powder and cron flour
  • mix well
  • reduce the flame
  • leave it on the flame till potato become crispy
