Vegan Vegetable Thai Yellow curry recipe - Thai recipes - Gravy Recipes - Curry Recipes

I love Thai Recipes. Recently my first son also started liking Thai recipes. Normally my sis buys vegetarian red curry paste from US for me. However I wanted to try this Yellow curry from scratch. I searched thro' net. I have tried based on what I had and my preference. Our family is not a big fan of raw coriander seeds so I had used powder. If you don't have Red bird eye fresh chillies use dry red chillies. If you are using dried one soak it hot water for 30 mins before using it. I had this with rice as well as with Chapathi. Both went well. I have used homemade coconut milk. You can use canned coconut milk too
Ingredients:

For Masala

Shallots - 10
Garlic - 4 cloves
Curry powder - 2 teaspoon
Galangal / Thai ginger - 1 inch (if you don't have it use normal ginger)
Salt
Sugar - 2 teaspoon
Red chillies - 3
Lemon grass - 1
Coriander powder - 1 teaspoon
Peanut powder - 1 tablespoon
Soya sauce - 1 tablespoon
Lime leaves - 3
Coriander leaves roots - from 5 stalks 
coconut milk - 2 tablespoon + 2 tablespoon of water

For Gravy

Coconut milk - 1 cup
Mixed vegetables - 3 cups (I have sued Carrot, bell peppers, broccoli and beans)
Water - 1.5 cup
Coconut oil - 1 tablespoon
Basil leaves - 1 tablespoon (Optional)
Coriander Leaves - 1 tablespoon 
Salt to taste


Method:

Take all the ingredients except salt, sugar, soya sauce, peanut powder and coconut milk.  Grind to smooth paste. Add Sugar, peanut powder, salt and soya sauce. 
 Grind again. Heat coconut oil and add grinded paste
Fry for 2 mins. Add 2 tablespoon of coconut milk and 2 tablespoon of water. Let it boil. Add mixed vegetables
Add salt and water. Let it cook by closing lid
Reduce flame and add coconut milk. When it start to bubble add coriander leaves. and mix well
Switch it off and serve hot
