Cheese cake is one the most loved baking recipe in my household esp eggless cheese cake. It is also one of the most popular recipe in my blog. I wanted to try pound cake with it. But every time I get cream cheese I end up making our favourite cheese cake. So this time when I bought cream cheese I purposely bought it in lower qty so that it is not enough to make cheese cake. When I started doing the cake my son was enquiring about what was I baking.I wanted to give some surprise so I didn't tell him about cream cheese. When I mentioned pound cake he went like are you hidding something? Because I have basic pound cake and eggless two tone cake already on the blog, he asked why I was still taking pictures. Finally when he tasted this cake, which was very rich and tasty, I told him about cream cheese and he said now the cat is out of the bag. Let's move on to the recipePin It Now!
All purpose flour - 2 cups (250g)
Baking powder - 1 teaspoon
Baking Soda - 1/2 teaspoon
Salt a pinch
Sugar - 5/8 to 2/3 cup (I have used 5/8 cup. 125g to 150g of sugar. Powder it in blender / food processor)
Cream cheese - 1/2 cup (115g)
Vanilla extract - 1 teaspoon
Lemon juice - 1 teaspoon
Butter milk - 1/4 cup
Yogurt - 2 tablespoons
Oil - 3 tablespoons
Shift all purpose flour, baking powder, baking soda, salt twice and keep it aside
Add room temp cream cheese, yogurt, vanilla extract, lemon juice, powdered sugar, butter milk and oil. Beat it till it is creamy and smooth. I have used hand mixer you can whisk it too.
Pre heat the oven at 180 degree. Bake the cake at 180 degree C for 22 mins or till inserted toothpick comes out clean and top is browned. Remove it from the oven and let it cool down completely. Slice it to your preference and Serve
