I have seen cupcake recipes with milk powder. I wanted to try for long time. But somehow I keep forgetting to get milk powder. Finally last weekend I managed to pick up some milk powder. So I went ahead to try out this recipe. I have used roasted oats flour. I had Oats powder / Flour at home so I don't have step wise pic for that. If you don't have dry roasted, Dry roast quick cooking oats till nice aroma released and let it cool down. Powder it in blender and mixer. 
Ingredients

Self raising flour - 3/4 cup
Oats flour - 3/4 cup
Butter - 170 gram
Sugar - 3/4 cup
Coconut cream powder - 2 tablespoon (heaped)
Thinly sliced almond - 3 tablespoon
Vanilla essence - 1 teaspoon
Water - 1/2 cup (Luke warm temp)
Milk powder - 70g
Baking soda- 1/2 teaspoon
Salt a pinch (If you are using salted butter skip this)


Method:

Mix Coconut cream and milk powder. Add luke warm water and mix it well without any lumps.
Sift Self raising flour, Oats flour, salt and baking soda twice. Keep it aside. In a wide bowl cream the room temp butter. Add powdered sugar and vanilla essence
Cream it. Add Milk powder mixture. Mix it
Add dry ingredients in 2 batches. Mix well. (don't over mix it ).
Add sliced almonds and mix it
Fill the greased cup cake mould till 3/4th. Pre heat the oven at 180 degree. Bake it till top is slight brown. (I baked it for 22 mins). Let it cool down

  5. Looks delectable. Life will be so easy with these prebaked on breakfast. But I have a little query Veena. Can I use regular old fashioned oat in this? I have a huge packet of it without any much use. If yes, please let me know how :)
