I was looking for some quick eggless cookies and with wheat flour. Our whole family loves nuts. To make healthy it I have decided to use Almond in this cookies. My kids loved it. This is eggless and so soft. Perfect for tea time .. According to my son it is so addictive ..Originally I baked it to be distributed but it finished. I had to bake the 2nd batch :-)
Ingredients:
Whole Wheat Flour : 1.5 cup
Sugar - 1/2 cup
Unsalted Butter: 1/2 cup, at room temperature
Baked Almond - 1/2 cup
Vanilla Essence: 1 teaspoon
Salt a pinch (If you are using salted butter ignore it)
Milk - 3/4 tablespoon to 1 tablespoon (or amount that is needed)
Method:
Since I am using baked nuts I powder it directly. If you are using raw almond toast it in microwave first. Cool it down completely before grinding into powder (It doesn't have to smooth) To toast the nuts, preheat the oven to 180 degree C. Spread the nuts on a baking tray and bake them for 7 - 8 minutes or till nice aroma comes. Cool it completely. Once cool down powder it in mixie. Powder the sugar using blender or mixer. Keep it aside
Pre heat the oven to 180 degree C. Cream together butter and powdered sugar. Add vanilla essence, baking powder, wheat flour, Almond flour and salt. Make it to a smooth dough. If needed add milk little by little to make the smooth hard dough.
Keep it in fridge for 10 mins. Divide the dough into ~25 balls and flatten it using your plam. And bake it at 180 degree C for 15-17 mins or till the sides of cookies start to brown
Let it cool down and store it in air tight container.
