White Chocolate Chip Blondies – White Chocolate Brownies - Eggless Brownie recipe - Simple cake recipe

When I saw this recipe at Sundari's Mymagic pan I have bookmarked immediately. My 2nd son loves white chocolate in any form. I have decided to do this for his birthday. As I expected he enjoyed every bit of it. This cake was really very soft and light. I have followed her recipe for most parts but I have reduced sugar and replaced some of All purpose flour with whole wheat flour
Ingredients

All Purpose Flour – 3/4 cup + 2tbsp
Whole wheat pastry flour - 1/4 cup
White Chocolate Chips .baking chocolate – 135g
Baking powder – 1 tsp
Salt – 1/4 tsp
Brown Sugar – 1/4 cup + 2 tablespoon
Sugar – 1/4 cup
Unsalted Butter – 75g
Vanilla Extract – 1 tsp
Milk – 1/2 cup
Vinegar - 2 teaspoon
Buttermilk - 1/4 cup

Method

Add vinegar to milk and keep it aside for 10 mins. Grease the baking tray and keep it aside.
Sift together all purpose flour, whole wheat flour, salt, baking powder and keep it aside. In a bowl add sugar and butter cream it together. 
Add vanilla essence, milk, buttermilk, Vinegar,  and beat it for 30 mins (I have used handheld beater). Microwave the white chocolate for 30 sec. Add this to the batter. Add dry ingredients and mix till it folds well (don't over beat it).
Pour it in greased baking tray. Pre heat the oven at 180 degree C and bake the cake for 25 - 28 mins or till inserted toothpick comes out clean.
Cool the cake completely and enjoy it

    1. I find it gives different texture esp if you are using Indian Atta.. However I have used whole wheat flour in the place of wheat pastry flour before it is ok.. In case if you don;t have whole wheat flour u can use All purpose flour itself
