Pori Upma - Murmura Upma - puffed rice upma - light meals

Once my colleague from office told me being vegetarian is so boring. You have less options. After year of working together and eating lunch together he was amazed at the options / different kind of food we make. Anyway back to this recipe, this is one of quick, simple recipe who wants to have light meal after heavy feasting or healthy evening snack. This can be perfect for kids after school snack
Ingredients

Puffed Rice - 2 cup
Mixed vegetables - 1 cup (I have used beans and carrot. I wanted to have this with more vegetables. if you want you can reduce it to 1/2 cup)
Salt to taste
Tomatoes - 1 (finely chopped)
Onion - 1 (finely chopped)
Green chillies - 2 (finely chopped)
Turmeric powder - 1/4 teaspoon
Roasted peanuts - 1/4 cup
Garam masala - 1/4 teaspoon
Mustard seeds - 1/4 teaspoon
Curry leaves - 10
Coriander leaves - 1 tablespoon (finely chopped)
urad dhal (dal) - 1 teaspoon
bengal gram dhal (dal) - 1 teaspoon
Oil - 2 teapsoons

Method

Wash puffed rice in running water or pour water in the bowl and immerse the puffed rice. Squeeze out the water immediately. Separate puffed rice.

Heat pan. Add oil when it is hot add mustard seeds. when it start to pop add urad dhal, bengal gram dhal and curry leaves. fry till dhals are brown in color. Add onion and fry till they are transparent. Add tomatoes and fry thill mushy. Add all the vegetables and salt. cook it by closing lid. Add garam masala, turmeric powder and mix well.Fry for another 2 mins. Add Puffed rice and mix well. Add fried peanuts and coriander leaves and mix well.
Switch it off. Mix well and serve hot.

  1. I so agree about adding flavors to excite the taste of vegetarian dishes. I learned and improved because we have allocated one day per week as meatless day. Its a beautiful and colorful dish, certainly tempting.
