This is yet another sundal / Salad which is very tasty and so easy to do. One of the beach item I must have whenever I visit beach back in India. This has perfect combination of tastes. Whenever I have this brings back the memory of being on beach. These days it has become luxury.
Turmeric powder – 1/2 teaspoon (optional)
Red dry chillies – 3 (broken into 2)
Fresh grated coconut – 3 tablespoon
Ginger – 1 inch piece
Grated Mango – 1/4 cup
Mustard seeds – 1/4 teaspoon
Lemon juice – 1 tablespoon (If mango is sour reduce it)
Curry leaves – 7-10 leaves
Salt – to taste
Oil – 1 teaspoon
Soak dry peas in enough water over night or for 8 – 10 hours. Discard the water and add fresh water, salt and turmeric powder and pressure cook till 2 whistles. Drain the excess water and keep the peas aside.
Heat a pan with oil. Add mustard seeds and when it crackles, add curry leaves, Ginger, Red dry chillies. Fry for 20 sec. Now add Carrot, Mango and sauté for 1-2 mins. Add cooked peas and mix well. Switch of the flame. Add lemon juice and mix well
Garnish with grated coconut and serve. Enjoy the tasty sundal/Salad
