Tomato Basil Soup

My husband is big fan of tomato. He literally takes anything with tomatoes. I have developed liking of Basil recently. Basil gives some unique taste to the dishes. I love it! I am lucky that my kids also like it. So these days I stock it up on basil leaves every week. I love tomatoes which is in deep red. It is very tasty. I made this soup few times. I managed to take snap this time. It is really easy and healthy too
Ingredients
Tomato - 5 (fully ripped. Cube into one inch piece) If you don't have fresh can use canned one
White Onion  - 1/2 (cubed)
Red Onion - 1/2 (Cubed)
Ginger - 1 inch (chopped finely)
Garlic - 4-5 pods  (chopped roughly)
Basil leaves - 1 cup (If you don't like the strong taste of it reduce it to 3/4)
Pepper powder - 1 teaspoon (Adjust to ur spice level)
Salt per taste
Oil - 2 teaspoon (I have used olive oil)
Sugar - 1/2 teaspoon (optional)

Method:

Heat oil in the kada / pressure pan. When it is hot add ginger and garlic. Fry till Garlic is slight brown color. Add onion and fry till onion is slight brown in color. Add tomatoes and fry for 2 mins. Add salt and water. Let it boil. Add washed basil leaves. Close the lid ad let it cook for 10 mins or with weight for 1-2 whistles.
When it cool down filter the excess water and transfer other into food processor or mixie or blender and make it to puree. Heat the pan again and add the excess water you have filtered and let it boil. when it is boiling add the puree. Add salt (if needed), Sugar (if adding. I didn't add), pepper powder. Mix well. Let it boil.
Switch it off and serve hot with your favourite serving options
