I was wondering what to do for weekend breakfast. Kids prefer to have something different other than bread. I was also having fully ripened banana and wanted to use that too. Was asking kids on what do they want to have. Muffin was their choice..So tried out the banana chocolate muffinPin It Now!
- Plain Flour - 1/2 cup + 1 teaspoon for dusting choco chips
- Oats Flour - 1/2 Cup ( roast the oats and grind to the powder)
- Wheat Germ - 1 cup
- Salt a pinch
- Banana - 4 medium size
- Oil - 1/3 cup
- Granulated Sugar - 1/2 cup
- Apple sauce - 1/3 cup
- Baking soda - 1 and 1/2 teaspoon
- Vanilla essence - 1 teaspoon
- Semi sweet chocolate chips - 1/2 cup (Adjust to your taste)
Sieve plain flour, salt and baking soda till it is mixed well. Add Wheat Germ and mix well. Keep it aside.
Peel the skin of the banana and mash them well (I grinded it to a smooth paste). In broader vessel mix in oil, vanilla essence, mashed banana. Fold in sugar and mix well. Add the dry ingredients in batches mix well (Just enough to incorporate all the ingredients). Dust choco chips with a teaspoon of flour. Add Chocolate chips and mix well
Preheat oven to 180 deg C. Either grease the muffin tray or muffin paper cups.Fill in the muffin mixture till 3/4th, add in the remaining almonds and bake it for 30 -35 mins till the top is browned or till it is fully cooked (insert a tooth pick and the stick should come out clean). It took about 35 mins for mine to be done
Serve this healthy muffin with favourite toast option
