Eggless Dates Cake

It has been interesting year for me with the start of this blog. As my kids say after starting the blog they get different variety of food. Especially all the baked goodies. They loved it

Would like to end wonderful year with a healthy cake!

When I saw the recipe at http://www.spicytreats.net/2012/12/dates-cake-eggless-dates-cake-dates.html I couldn't wait to try it out. It is so easy and healthy. I have added slight modification to the original recipe. Addition of Coconut flakes gave a nice flavour. Also I have reduced the sugar to 1/4 Cup as dates sweet was good enough for me.

Pink Beans Salad / Sundal

Pink beans are small oval-shaped beans, pale pink in color, also known by the Spanish name Habichuelas Rosadas. The most famous pink bean is the Santa Maria pinquito (spanglish = pink and small(ito)), which is commercially grown on the mesas above Santa Maria, California, and is a necessary ingredient in Santa Maria Tri-tip barbecue.

I love this beans from the time I saw it / tried it. I do it at least once a week. But never got to take photos as everyone in our family love it. I was at home today and managed to take it before it disappear :-). This beans are good for bone and get cooked very fast, with simple seasoning it taste wonderful.

Chocolate Kalakand

I would like to celebrate small milestone yes this 500th post of this blog!. I started this blog out of interest in photography and before starting I was looking around and wondered whether I will justice to what I want to do with 101 things to be done and with less time on hand. Well, here I am and I am happy for all the support and encouraging words I have recieved from fellow bloggers and all the new friends I have gained.
Now, back to today's post I had mawa / Khoya in the fridge and was thinking about what to do. I saw this recipe sometime back in Nag's Place. My kids are big fan of Chocolate. Malai Kofta (Cheese balls in mild gravy)

I love Malai Kofta. Whenever we eat out we order this without any fail. I have tasted kofta in different types / tastes. I like the one with more Paneer. Because it is more soft, creamy and tastier. Pizza Dosa

My aunt used to make Mexican uttappam. I wanted to try it out as Pizza dosa with cheese. I have used bread cheese which is 60% less fat. If you prefer other types of cheese pls go ahead and enjoy. To me this is perfect fusion and good for a lazy weekend brunch

Almond Cranberry Cookies / Shortbreads

I made Melting moments cookies (snowball) and disappeared within 3 days. After my melting moments my kids wanted something similar for Christmas. I read lot about almond flour so I wanted to something with it (make it little more healthier). So decided to substitute part of all purpose flour with almond. I was worried about the strong flavour of almond. Kept my fingers crossed but in the end it came out extremely good. Everyone loved it.

Soya Chunks Sandwich (Meal Maker sandwich)

These days we have craze for soya chunks. My son wanted a sandwich. I love soy chunks from childhood. It is quite filling and keep your kids active for long time. It is high in protein and a good way to start the day. Spices are used to suppress the unique smell of soy chunks. If you are avoiding soy chunks due to smell you should try again!

Banana Peanut Butter MilkShake

My kids are big fans of milkshakes esp with bananas. They are willing to try different ones also. Most of the time I try to do something healthy .. I tried this with normal banana and frozen ones.. I find frozen ones are more creamy. This will give power start for the day

Maple Oat Muffins

When I saw from a library book that I have borrowed I was happy because it is low in calorie and sugar. It is so easy to make it. It is perfect for your breakfast. First time I have used maple syrup in baking. Tasted great

Amla Thokku (Nellikai / Gooseberry Chutney)

My father used to advice us to have one amla a day. But because of the taste  we keep ignoring it. One of my colleague after watching BBC started talking about amla and he was willing to have one a day. So we decide to stock it in Office and have it everyday (thinking eating together kind of re enforce and give us motivation to eat). It went on for a couple of months and started to fade away. But during those period I realized my immunity has improved. So decided to continue the habit. This weekend when I went for grocery shopping I saw nice amlas so brought more than normal. So decided to some spicy chutney or spread which can be used with Chappathi, bread or even rice.

Banana Oat Meal Choco Chip Cake

It has been an a while since I have baked a cake. Today I had urge to bake. So far all my cakes were using all purpose flour. Today I wanted to try out with Wheat. I was searching on the net.. I came across this version which looked interesting. Original recipe calls for 2 cups unbleached flour. I have used 1 cup all purpose flour and 1 cup wheat flour. Pls. click here for original recipe. Tomato Pickle (Method 1)

When I was in India my mom did quick tomato pickle. Tasted very good and it can go well with lot of dishes. This is simpler version then my mums normal one. It can last for about 10 days outside 2 weeks in the fridge.

Ridge Gourd (Peerangakai) Soup

This is something I saw sometime ago in TV show by Revathy shunmugam. I was bit surprised with the less ingredient used. When I first wanted to try this I was bit nervous on how this will turn out. To my surprise this is simple yet very flavourful soup. This recipe is a keeper for me.

Cashew Nuts Uttappam

Last time when I visited India we went out for dinner. They had Cashew nut uttappam. My son loved it. And he has been asking for it since then. I was hesitant due to the calorie in it. Today they went for good workout. So I have decided to reward them. If you are Cashew lover sure you will love it

Oats Kara Paniyaram

I love Kuli Paniyaram. I try to do lot of different types (Kulipaniyaram, Hoarse Gram (Kullu) kuli paniyaram). My kids also love it. This is high in protein. Channa dhal gives nice flavour to it also.

Thattai Chat

Our family is big fan of chats. Normally I do Bhel Puri or Pani Puri. We also love both green chutney and sweet chutney I always keep those chutneys in my fridge. I was bit lazy to do puri. Since we just came back from India we had some titbits like Thattai at home. So I told my kids we can try to make chat with Thattai instead of normal Papdi or Puri. They said why not! it tasted great

Urad Dhal Kanji / Porridge

I normally have urad dhal porridge at least once a week. I use the ready made mix for this. I run out of readymade mix so asked my mum about doing it from scratch. So this recipe is from her. This is good for health, It helps to relieve cold, high in protein so what are you waiting for! I am not a sweet tooth person. So my jaggery measurement is lower. My mum recommended 6-7 tablespoon

Vaazhaithandu (plantain stem) and Oats Poriyal - Banana stem stir fry

When I was browsing thro' net I saw this which is very interesting because of the addition of oats. Normally I  just with cooked moong dhal. Once I tried with this and everyone  loved it. so these days this is our regular way of making plantain stem. Capcicum Pickle

This is one of my favourite pickle. This recipe is from my mum. This goes well with all the south indian tiffin like idli, dosa, iddiyappam or Rice or North Indian dishes like chappathi, Naan, Roti etc.. This can last for 10-15 days outside the fridge and in fridge for about a month. Make sure you use clean spoon for serving

Tofu Babycorn Fry

Only recently I started to use baby corn in my cooking. My kids were not fond of normal corn but seems to be warming up to having baby corn. I had some Schezwan Sauce left in the fridge. This is nice fusion dish. If you are tofu person you will love it. This is good enough to be snack

Coconut Cookies

My kids are big fans of cookies. In fact during every weekend morning they have to have biscuit break. Any type of cookie is ok with them of course their most favourite one is chocolate cookies. This weekend I wanted to try something quick yet something that will satisfy the kids. I love to bake when the kids are around as every few mins they walk past and ask at what stage I am at and when we can get our hands on it etc.. Normally my mum does Arisi puttu. I love it from my childhood days. This time when I was in India I told my mum I want to try different puttu (of course for the blog). My Mum had a cook and she recommended Moong dhal puttu. I was so happy to try it because it is not not rice base more of dhal base. So it is protein rich dish.

2012 Christmas Lighting

I went to Orchard, Singapore to see the Christmas lighting this weekend. I  visit every year just for the beautiful Christmas lightings. This year I the lightings are not as spectacular as last year but still good.As usual Takashimaya has a gigantic Christmas tree which is must see if you are going to see the lighting. White Chocolate Dream Cake With White Chocolate sour Cream Frosting

After my first son's birthday, my 2nd son also wanted to have birthday cake which is home baked. I wanted to bake same chocolate cake  since it came out so well that everyone who tasted it liked it... But my son insisted he wanted something different and kept on bugging me for white chocolate base. I did some research in the internet could not find any eggless version.. I almost thought of making with egg. Given that he is allergic to egg, I still want to try something without egg. In the end I made up my own recipe. I was nervous about how it will turn up so much so that I even forgot to take step by step photos for Frosting. But in the end everyone loved it.

Sundaikai (turkey berry) Puli Kulambu

Sundaikai is my favourite from my childhood. No one in rest of my family like it. So whenever my mum does sundaikai no one would fight with me for the share. Also she has do something which will last for few days as I will be the only one who will eat. Puli kulambu is one of those dish that can last for 10 days. Esp this one. This doesn't contain any coconut so it can last longer. I did this after long time and my kids loved it. It is good for health too

Inji Curry / Puli Inji Recipe

My Mum is not a big fan of ginger so before marriage I seldom eat ginger based dishes (meaning ginger as main ingredients). However after my college days I started develop liking towards ginger (thanks to one of my close friend her mum makes ginger roti, ginger chutney, ginger pickle etc..) So now, I am a big fan of ginger.. Recently my fellow bloggers has posted so many ginger recipes. It was so tempting. Chia Seeds Pudding

This week I am in the mood to clear all the left over small small portion of nuts, flour, seeds etc... Preparing for new stock haha!. I had some flax seed powder and Chia seeds. Not sure if you guys go thro' this, when you first try something new and you like it you make it more often and after some time you get bored with that and completely stop making or eating it. Sometime I go thro' that. Chia seeds when I first brought that I was taking one tablespoon every day as it is tasteless you can add to anything you eat or drink. So it is easy to include that as part of the diet. Today I wanted to do some pudding using that. So hear you with the simple yet quite filling and power start for your day

During my school days this used to be one of regular after school snack. It is light and easy to do. However I  love Peanut so every time I want to make sweet ball I will go for peanut ball as that is preffered over any other sweet. This time I make it a point to make for Karthigai Deepam. Schezwan Fried Rice

My kids love Chinese food. I love to spicy food. I love the vegetable fried rice esp Chinese version of because it has less masala also we can add as much vegetable or any vegetable we like. Vegetables in these are not overcooked, it stays crunchy and tastes great. Making this can be easy and fast if you have schezwan sauce. This rice can be done with left over rice. You can also use any type of rice Brown / Normal white rice / Basmati rice

Mexican Rice

I love whole beans in any form. Whenever I travel to US most of the time I go for Mexican cuisine and it is full of whole beans. Normal mexican rice is without any whole dhal however I want to make it a more complete and balanced rice so decided to add black bean. I had some left over vegetable stock and decided to use that to make the rice. This rice tastes better only with vegetable broth or stock. Otherwise it is bit plain. Our family loves this variety of rice.

Gujarathi Dhal

My Son loves Dhal and Peanut. For me given option I prefer to have something else other than dhal (for iddiyappam, pongal etc..). Today my son was not feeling well and wanted something light to go with Chappathi. I saw this recipe from Mallika Badrinath thought this wouldn't be bad. It is also well balanaced with the addition of peanuts. This is dhal with no onion and garlic.

Kadappa ( Potatoes cooked in spicy lentil gravy)

I did my 11th std (1st year JC) in SVS @ Trichy. Stayed in the hostel for a year (after that my family moved to Trichy because of my pestering). Most of the time I will go home for the weekend (even though you are not allowed to go every weekend). Every weekend they serve Dosa (we tease that is dunlop tyre) because it will be thick. If you know the cook you can get the paper roast! But the side dish they serve for that is good. Kadappa! It goes pretty well with Dosa/idlli. Mint leave is my addition to the recipe

Pineapple Sheera (Pineapple Kesari)


We normally do only plan Kesari. It is one of my husband's favourite sweet. Most of the time I do 
normal plain one. But Once in a while I try to sneak in some twist. Addition of fruit makes it
interesting. Adjust the sugar level based on sweetness of of Pineapple. I can say this as healthy
as sweetness comes from sweetness of the pineapple & only 1 teaspoon sugar added

Paneer Bonda (Cottage Cheese Balls)

I do paneer dish at least twice a week. Over this weekend my son was asking for some snack. He wanted something like bonda or bajji. I don't have raw banana at home, they are not big fan of onion or potato. So decided to do Paneer. It is good quick and healthier snack. I made it using Kulipaniyaram tawa instead of deep frying.

Ash Gourd Kootu / Ash Gourd Vegetable Gravy

This Kootu is very fast to make and healthy too. This goes well with rice or chapathi or even bread. It is so healthy that you can feed it to your baby/ toddler. I have used Ash gourd but other vegetables like Chayote (Chow Chow), Eggplant (Brinjal), Bottle Gourd, Snake gourd can be used also. This can be good option for dieters as it has dhal and vegetable goodness.

Aval (Poha/beaten rice) Soya


By now you would have noticed that I love everything about Poha. Some form of the soya is a must for me at least once a day as that is good source of protein for vegetarian. When I was thinking about what to pack for my lunch tomorrow I was thinking why not mix my 2 favourites together. It tasted wonderful and it is very healthy too

As any kids my kids are also big fan of cookies. After doing successful baking few times I am getting addicted to baking cookies / cakes. These days I am on non stop marathon of cookie baking. Quinoa is my favourite grain due to it's nutritional value. My mum used to say healthy stuff doesn't taste good.. So If I tell her to try something healthy she will think twice.. Aval (Beaten / Flatten Rice) Kheer / Payasam


Aval is one my favourite. I use it in numerous ways. It is lighter than rice and easy to cook. Takes only fraction of what rice takes. My mum used to do this easy snack if she couldn't find anything else for after school snack.. It is so easy and quick fix for hungry kids..

Kara Pori (Masala puffed rice)

I love this. It is so easy to do. Whenever I run out of snack for kids I will just do this. This is yet another dish in which it is difficult to go wrong. Also you almost mix any nuts or dhal yet it will taste wonderful. It is good tea time or after school snack. It is good for rainy season too. It is definitely healthier one...

Peanut Butter Cookies

For some reason, I still have fear to do cookies and bread. Bread is due to yeast.. Every week my kids want to have meal at subway at least once a week. It is not because of the sandwiches there it is because of cookies. As I bake more often they have been asking for cookies.Sometime ago I did Chocolate Chip Cookies and kids loved it. For some reason I haven't tried cookies after that. This weekend I have decided to try it out again. This time with peanut butter cookies. It came out extremely good

Gulab Jamun / Indian sweet doughnut

Before kids were born, I used to make Gulab Jamun or carrot halwa for any festival. During those days these were the only sweets I knew how to do. Gulab Jamun I used the ready made mix in the past. Even that sometime used to be too soft and sometime it used to perfect. I prefer the deep fried balls before putting into sugar syrup. So I do it 1/2 dry and 1/2 with sugar. After kids started eating sweet it is more of carrot kheer and mysore pak. So I seldom do gulab jamun. I wanted to try this from scratch so I tried today it came out pretty good

Banana Coffee

I am not a coffee person. I had fully ripe banana. I normally find it difficult to eat fully ripped one. So wanted to try milkshake (since cannot waste food:-)). I love nutella coffee. So I was thinking of adding 1/2 teaspoon of nescafe powder to the milkshake to try it out. I tasted so nice. I didn't add sugar to this drink at all

Kara Boodhi / Besan flour crispy ball


When I was in the college I prefer to have kara boodhi instead of mixture.. So for every deepavali when my mum makes mixture she keep some kara boodhi separately for me. This is one of the easiest snack. This is can be eaten alone or with curd or mixed in for mixture or used to make ladoo.

Vegetable Biryani (Method 2)

This is version I made first within few weeks after my marriage. I am not a big fan of coconut. Infact till couple of years I don't eat dishes with coconut. So right after marriage my husband ask for biryani I was not sure how to do it. I never bothered to learn from my mum as she uses coconut gravy to make her version of biryani (which I have posted earlier). So I have to rely on my bible those days -- Malika Badrinath. When I saw this version, I jumped out of joy. It is my regulars whenever I invite guest at home. It is definitely healthier version and taste wise it is different from traditional versions but really yummy!

Roasted Gram Dhal Balls

I am big fan of peanut balls. However whenever my mum does it she also do it with Roasted Gram dhal also. These days you can get Ground nut (peanut balls) in the shops but I seldom see Roasted Gram Dhal balls. Suddenly I had the urge to eat the roasted gram dhal balls. My kids never tried that before. I wanted to give it a try. It came out very good.
